How is DR. HÖHL'S organic apple cider vinegar made?

Fully ripe apples from German organic orchards are carefully pressed and gently made into organic apple wine. The fructose in apple juice completely ferments into alcohol.

Then the second fermentation process takes place. In the complex submerged process, the biological vinegar bacteria completely convert the alcohol into acetic acid. The valuable ingredients and active ingredients of the apple and its fine aroma are optimally protected and preserved by the closed system in stainless steel tanks.

To clarify the apple cider vinegar, we completely avoid using animal additives such as gelatin, but instead filter it traditionally using mechanical means. That's why our apple cider vinegar is clearly vegan. The finished vinegar is then filled into glass bottles without the addition of sulfurous acid.

What is special about using whole apples for apple cider vinegar?

The difference in quality that makes BioEss a particularly good tasting apple cider vinegar is the use of the whole , fully ripe apple. The valuable ingredients that are concentrated directly under the peel (which is why choosing organic fruit is important) are also part of our BioEss apple cider vinegars. We don't put apple leftovers that arise during food production (e.g. for applesauce) in the bottle.

In addition, BioEss is made from 100% local orchard apples - this is sustainable in the sense of biodiversity and environmentally/conscious. BioEss is the regional vinegar for countless possible uses!

What is the mother of vinegar?

The vinegar mother is a natural bacterial colony, without which the fermentation of apple cider vinegar, i.e. the conversion of the alcohol from the apple cider into acetic acid, would not take place. It forms on its own when drinks containing alcohol are left open for a long period of time and attract vinegar bacteria from the air. The vinegar mother is a gelatinous, stringy mass that floats in the vinegar. It may not look particularly appetizing to some people, but it is absolutely harmless.

Before the clear vinegar is bottled, it is filtered out. If this filtering process is done vegan, i.e. mechanically and without gelatin, it can happen that tiny residues of acetic acid bacteria re-form into a vinegar mother. This is a sign of the natural nature of the vinegar and should not spoil the enjoyment and joy of the product :-)

What is the difference between clear and naturally cloudy BioEss apple cider vinegar?

The only difference between our clear and our naturally cloudy apple cider vinegar is that the clear one is mechanically filtered (i.e. without gelatin!). BioEss naturally cloudy still contains the natural cloudy substances (apple fibers and traces of the vinegar mother) and therefore tastes milder, earthier.

The clear tastes fruitier, more appley (with the same acidity of 5%). In addition to the look, the difference lies in the taste 😊

Is BioEss apple cider vinegar compatible with histamine intolerance?

Apple cider vinegar is generally “histamine-free” when made under optimal conditions. Since honey can be a possible “histamine problem”, we had our RECIPE 1779 (apple cider vinegar-honey mixture) tested. Luckily for us and as confirmation of the high quality of BioEss: This report was negative! (Info: Histamine can be detected from < 0.25 mg/kg.)

BioEss is generally very well tolerated with HIT - but as always, you should test it yourself carefully, every body is unique!

How long does apple cider vinegar last?

Apple cider vinegar is a double-fermented (fermented) product. First, the apple juice becomes apple cider and then the vinegar bacteria convert the alcohol into acetic acid, which in itself has preservative properties. The result is a fully fermented product with 5% acidity that, according to food regulations, has no best-before date. DR. HÖHL'S BioEss apple cider vinegar cannot spoil (especially when sealed) due to the acid concentration.

Unfortunately, our manufactory product REZEPTUR 1779 has to have a best before date because we make it for you by hand. Both apple cider vinegar and honey are both preservative foods. This is similar to Himalayan salt, which has a shelf life when it is filled into packaging.

There are particles in clear apple cider vinegar, can I still use it?

Due to the naturalness and vegan filtration of our clear BioEss, the sediment can settle on its own during storage and thus lead to a natural clouding of the apple cider vinegar. We guarantee that this does not mean a loss of taste or quality, but on the contrary it proves that all chemical additives have been omitted. BioEss is a quality product that is natural and made with the greatest care from 100% local organic apples from species-rich orchards.

Is BioEss without additives, such as: B. Gelatin?

For our organic DR. HÖHL'S BioEss apple cider vinegar, naturally cloudy or clear, we guarantee that they are absolutely natural products: BioEss is vegan filtered (BioEss clear), made without any colors or preservatives, contains no sulfurous acid and is made from 100% whole, fully ripe, ecologically certified apples from German orchards.

What pH value does DR. HÖHL'S BioEss have?

DR. HÖHL'S BioEss apple cider vinegar has a pH value of 3.2. As with all natural products, this can be subject to fluctuations.

What does the number on the back label mean for BioEss clear/naturally cloudy?

The number on the label is the batch size, which is made up of the bottling date + 3 years (in reverse order). For example, the bottle label 11/17/11 means that this bottle of DR. HÖHL'S BioEss apple cider vinegar was filled on November 11, 2014.

However, this does not mean that you can no longer use apple cider vinegar after this date. Apple cider vinegar is a fully fermented product with 5% acidity and, according to LMV, has no best before date.

How should I store apple cider vinegar?

Apple cider vinegar cannot spoil in a closed bottle . Nevertheless, the bottle should not be stored in the warm or in the sun, otherwise the taste and aroma may suffer over the years.

Please store the opened bottle as cool and dark as possible and tightly closed.

DR. HÖHL'S BioEss apple cider vinegars don't have to be in the fridge. A shady dining table or the kitchen cupboard are enough
completely out.

If streaks or cloudy substances form, it may not look particularly appetizing, but it is completely harmless. It's just the vinegar bacteria themselves, the so-called vinegar mother, which forms when the vinegar comes into contact with air for too long.

DANGER! It's different with furry mold bacteria on the surface, which may have gotten into the vinegar from a dirty spoon or from the air
Apple cider vinegar has been spoiled “from the outside” and made inedible. These are the so-called kahm yeasts, which cause apple cider vinegar to smell musty and have nothing to do with the valuable vinegar bacteria. Such vinegar is moldy due to external fungi and must be thrown away. Trust your nose, you'll notice the difference immediately.

Is REZEPTUR 1779 suitable for Oxymel?

RECIPE 1779 contains only raw ingredients (not pasteurized) and is an optimal basis for producing your own Oxymel mixtures.

Why doesn't BioEss apple cider vinegar have an integrated pourer?

If the screw opening of the BioEss apple cider vinegar clear/naturally cloudy glass bottle is not practical for you, you can order a reusable pouring spout .

What is the difference between POMP Klassik and POMP Grande Cuvée?

Both cuvées are made from apple and grape - that is the POMP concept, which gives the creations their unique touch.

POMP Klassik is a cuvée of Riesling sparkling wine with apple wine.

POMP Grande Cuvée is a Riesling sparkling wine (Rheingau), blended with Champagne Reinette (historic noble apple variety).

How should I store the non-alcoholic aperitif?

A constantly cool storage temperature (e.g. in the cellar) ensures maximum quality is maintained. Possible clouding is often due to temperature fluctuations during storage! A possible trub at the bottom of the bottle of our POMP organic aperitifs 0.0 is a natural process and speaks for the naturalness of the products.

Is the alcohol-free aperitif suitable for pregnancy and breastfeeding?

The alcohol-free aperitif from DR. HÖHL'S conjures up a real sparkling wine feeling in the glass - with 0.0% alcohol. Whether it's a toast during pregnancy or a glass of champagne while breastfeeding, health awareness and fine celebrations without alcohol are possible with POMP 0.0.

Are there additives in the non-alcoholic aperitif?

We do not use any additives such as: E.g. sulfites! In our opinion, additives have no place, especially during pregnancy, breastfeeding or generally conscious consumption.

The sweetness, i.e. the sugar it contains, also comes purely from the sweetness of the fruit. We didn't even help with the great colors in the bottles, so we didn't use any additives (dyes) here either.

What is special about the alcohol-free organic aperitif from POMP?

POMP 0.0 is a uniquely complex composition of over 21 natural fruits, medicinal herbs and spices. Celebrate alcohol-free at eye level!

We use no additives and no added sugars.

This is not a dealcoholized product. That's why our POMP is called 0.0 because it never contained alcohol. Other non-alcoholic products may contain up to 0.5% alcohol.
