Oriental lentil salad with apple cider vinegar

1001 Nights meets German home cooking with apple cider vinegar!

Lenses – we love! They are healthy, easy to store and children also like lentils, especially when they taste as delicious as in my oriental lentil salad with apple cider vinegar . It is well known that lentils and apple cider vinegar not only taste good together, but also make the legume more digestible... one more reason for a new recipe for lentil salad, right? Here comes my favorite with an oriental touch!

Ingredients for 4 portions of lentil salad

  • 250 g lentils, brown
  • 4 large onions
  • 1 clove of garlic
  • 1 stick cinnamon
  • 1 large piece of ginger
  • 1/2 bunch of dill
  • 1 teaspoon cumin, ground
  • 6 tbsp DR. HÖHL'S BioEss naturally cloudy
  • 2 tbsp sweetener of your choice, e.g. B. Agave syrup ... OR replace apple cider vinegar + sweetener with our flavor booster RECIPE 1779
  • 4 tbsp olive oil
  • Pepper and salt to taste

Preparation of the lentil salad

This is how this oriental dream becomes reality:

  1. Soak lentils overnight. Then cook with the cinnamon stick, half of the chopped ginger and the garlic clove until al dente.
  2. Cut the onion into rings and fry in butter (or vegan alternative).
  3. Chop the dill and mix with the apple cider vinegar-honey RECIPE 1779, olive oil, cumin, pepper and salt to form a marinade.
  4. Pour over the still hot, drained lentils and mix well.
  5. Cut the remaining fresh ginger into fine strips and garnish with the onion rings. (Omit the raw ginger for children.)

Delicious as a salad with any BBQ, as a side dish or part of a balanced bowl, or as a vegetarian main course with iron. Children who don't like meat can get iron and protein this way.
